Playing With Fire!

I decided to attempt a s'more inspired cupcake.  Now don't get me wrong, s'mores are delicious in the right environment, but I wanted to make this puppy to play with my torch.  I received my kitchen torch months ago for Christmas and it was sitting in its box collecting dust.  I had grand ideas of creme brulee and beautiful meringue pies, but there it sat unused and forgotten...sorry little guy.

For this cupcake I started off with my go to chocolate cake recipe.  I filled the cupcake liners half full and then sprinkled crushed grahams on the top, before baking.  After the cupcakes cooled I piped this frosting on top...

Seven Minute Frosting
8 large egg whites
2 cups sugar
1/2 teaspoon cream of tartar
2 teaspoons pure vanilla extract

Place egg whites, sugar, and cream of tartar in the heatproof bowl of an electric mixer. Set over a saucepan with simmering water. Whisk constantly until sugar is dissolved and whites are warm to the touch, 3 to 4 minutes.

Transfer bowl to electric mixer fitted with the whisk attachment, and beat, starting on low speed, gradually increasing to high, until stiff, glossy peaks form, 5 to 7 minutes. Add vanilla, and mix until combined. Use immediately.

Then I unleashed the torch...muahahaha!

A sinfully delicious success.
